Barbecue, Barbeque, Bar-B-Que, BBQ, no matter what you call it or how you spell it, it still tastes great. In the South, this delicacy has been around since the 1800s when people ate cooked pork and would get together with friends and family and have “pig-pickin’s”. It is from this that our traditional barbecues come from.
There are several ways to prepare the meat, and each one has its own pros and cons. Whether you prefer cooking with wood chips such as hickory or mesquite, or using charcoal or propane, there really is no wrong way to do it. We cook fresh on an open pit over a wood fire every day. The pork, chicken, and ribs start fresh on the grill.
